Nutty mango cake with a nice orange and date jam.

Orange & mango cake
  • 200 grams Almond flour
  • 60 grams Gluten free flour mix
  • 1,5 teaspoon Baking soda
  • 200 grams Mango
  • 2 Eggs
  • 7 Dates
  • Orange and date jam
  • 10 Dates
  • 1 Orange (A big one. Use zest and juice)
  • 2 tablespoons Corn starch
  1. Mango and almond cakeMango and almond cake
    1. Turn on the oven to 200°C (180°C fan)
    2. Prepare a 23cm cake tin with baking paper
    3. Blend all the dry ingredients.
    4. Mix the dates and mango with a blender.
    5. Add the the dates, mango and the rest of the wet ingridients with the dry ones. 
    6. Mix well and add the cake batter to the cake tin
    7. Bake the cake in the oven for approx 30 min

    1. Mix the dates
    2. Use the zest and orange juice from one orange and add to a pot
    3. Turn on the stove, add the corn starch to the pot and wisk while the content thickens. Once it has a good contistency, add the dates and let simmer for a few min.
    4. Let the jam cool down before adding to the cake.
